Green Tea is considered to be "the virgin of teas" because it is the youngest, freshest and the least processed tea. It derives its name because of the ancient ceremony in which the first harvest of the season is actually done by virgin maidens of the plantation. This traditional harvesting method is still practiced on some tea plantations, even today.
Once picked, fresh Green Tea leaves cannot be stored for more than 24 hours before processing, otherwise the quality will seriously decline. On the Tea Plantations, the harvested Green Tea leaves are immediately processed without fermentation and oxidation by lightly drying the leaves and made ready for shipment.
